Garlic Chicken Baked with Cheddar Thyme Crust

Instructions:

Preheat oven to 350° F.
Lightly butter a medium baking dish. In a medium saucepan, melt butter over low heat. Stir in garlic and cook until tender, 2 to 3 minutes. In a shallow bowl, mix panko, Cheddar, Parmesan, thyme, salt and pepper. Dip each breast in garlic butter to coat then press into breadcrumb mixture. Turn to coat both sides. Arrange breasts in prepared baking dish. Drizzle with any remaining garlic butter and sprinkle with remaining topping. Bake about 25 minutes until chicken juices run clear when pierced with a fork.

4 tbsp. Tillamook® Salted Butter (plus extra for buttering baking dish)
2 tsp. minced garlic
½ cup panko breadcrumbs
¾ cup (3 oz.) Tillamook® Finely Shredded Medium Cheddar Cheese
1/4 cup shredded Parmesan
1/8 tsp. dried thyme
1/8 tsp. each salt and black pepper
4 boneless, skinless, chicken breast halves, lightly pounded to ¼-inch thick
