Beer Cheese Dip

With Tillamook Cream Cheese, Farmstyle Triple Cheddar Blend Shreds, a hint of crisp Pub Beer, and bacon (optional) you can't go wrong with this beer cheese dip. Pair it with chips, pretzels, or bread for any occasion.

  • In a large size cooking pot over medium heat, melt butter then sprinkle in flour, stirring consistently until golden brown colored paste forms a roux.  

  • Add the beer and whisk to combine. Simmer for 5-6 minutes to cook off the alcohol.

    • Can’t find Pub Beer? You can substitute another lager style beer of your choice without compromising the taste.  

  • Add the cream and bring to a simmer again.  

  • Add in the cream cheese and stir slowly until melted and combined into a smooth mixture.  

  • Slowly add in the shredded cheese while stirring until fully incorporated. Then add salt, pepper, mustard powder, smoked paprika, garlic and onion powder and cook while continuing to stir for another 4-5 minutes for the spices to fully infuse into the cheese sauce.  

  • Serve immediately in your dish of choice with pita, chips, baguette or veggies to dip and garnish with green onion and bacon as desired.
