Cheesy Broccoli Cheddar Bites

Culinary creator Maxine Sharf whipped up one of her favorite family recipes—cheesy broccoli and cheddar bites—using the Tillamook Triple Cheddar Blend. Loaded with bold, cheesy goodness and wholesome veggies, these bites are the perfect balance of comfort and nourishment.

  • Preheat the oven to 375F and grease a 9x13 baking dish with butter. 

  • In a large skillet, melt the butter over medium heat. Add the onion and garlic, season with salt and pepper, and cook, stirring, until the onion is translucent, about 4 mins. Add the broccoli and cook, stirring, until bright green and slightly tender, about 5 mins. 

  • Transfer into a large bowl and add 1 cup of the Tillamook Triple Cheddar Blend. Add the flour, baking powder, eggs, milk, and 2 tsp kosher salt.

  • Pour into the prepared baking dish spread into one even layer. Sprinkle the remaining cup of Tillamook Triple Cheddar Blend evenly on top. 

  • Bake 30-35 minutes until a toothpick inserted in the center comes out clean. Let cool for 15 minutes.

  • Cut into triangles with a sharp knife: Cut the 9-inch side into 4 sections, and the 13-inch side into 6 sections, creating 24 squares. Cut each square in half on a diagonal to create two triangles. 

  • Butter a sheet pan. Using a small spatula, transfer the broccoli bites to the prepared sheet pan, leaving a little space between each triangle. (At this stage, you could allow the bites to cool completely, then cover and refrigerate until ready to serve.) Bake the bites until slightly crisp, about 15 minutes. (This will also firm them up.) Let cool for 5 minutes, then transfer the bites to a platter or large plate and serve warm. Enjoy!
