Crispy Shrimp Sliders with Spicy Colby Jack Cheese

Ingredients

Shrimp Sliders

  • 1 ⅕ pound of shrimp, peeled and deveined

  • 1 medium egg

  • 1 ½ tbsp spoon soy sauce

  • 1 tbsp smoked paprika

  • ½ tsp kosher salt

  • ½ tsp pepper

  • 1 cup panko breadcrumbs, plus more for dredging

  • 4 garlic cloves, minced

  • ½ tbsp grated ginger

  • ¼ cup chopped cilantro

  • ¼ cup chopped scallions

  • 12 brioche sliders

  • Tillamook Spicy Colby Jack Cheese

Red cabbage slaw

  • ½ head of red cabbage, thinly sliced

  • 1 medium carrots, grated

  • ¼ cup cilantro chopped

  • 1 tablespoon rice vinegar

  • 1 tsp salt

  • 1 tsp pepper

Red pepper aioli

  • ½ cup mayonnaise

  • ⅓ cup roasted red peppers drained

  • 2 garlic cloves

  • ½ tbsp lemon juice

  • Salt to taste

  1. Prepare the Shrimp Patties divide the shrimp into two portions: pulse half the shrimp in a food processor with 1 egg until it forms a paste, and roughly chop the other half for texture.

  2. In a large mixing bowl, combine the shrimp paste and chopped shrimp. soy sauce, smoked paprika, salt, pepper, panko breadcrumbs, garlic, ginger, cilantro, and scallions. Mix until well combined.

  3. Form the mixture into 12 evenly-sized patties. Dredge each patty lightly in additional panko breadcrumbs for extra crunch.

  4. Heat a skillet or griddle over medium heat with oil. Cook the shrimp patties for 3-4 minutes per side, or until golden brown and cooked through.

  5. Make the Red Cabbage Slaw in a large bowl, combine the red cabbage, grated carrot, and chopped cilantro. Drizzle with rice vinegar and season with salt and pepper. Toss well to coat. Set aside.

  6. Prepare the Red Pepper Aioli In a blender or food processor, combine mayonnaise, roasted red peppers, garlic, lemon juice, and a pinch of salt. Blend until smooth. Adjust seasoning to taste.

  7. To assemble the sliders Place a shrimp patty on top, of the bottom buns top each patty with Tillamook Spicy Colby Jack Cheese melt in an oven set to 350 for 5 minutes.

  8. Next add a heap of red cabbage slaw. And drizzle on the red pepper aioli.

  9. Add the top bun to finish and serve immediately.
