Celebrate summer with these easy and delicious ice cream party sandwiches! Made with Tillamook Ice Cream and your favorite cookies, these treats are sure to be a hit.
Place cookies bottom-side up on a lined tray. Soft cookies will work best if you want to eat them right away.
Place one scoop of your favorite Tillamook ice cream directly onto the cookie (We used Tillamook Vanilla, Strawberry and Oregon Mudslide)
Top the scoop of ice cream with another cookie—this time right side up—and press down gently.
Cover the surface of a tray or a plate with your favorite all-natural sprinkles. Roll the ice-cream party sandwiches over the sprinkles like a wheel – covering the ice cream completely with sprinkles. Enjoy immediately or place them into the freezer until it’s time to eat!
