Melty Mozzarella Tomato Toast

Chef extraordinaire @GrossyPelosi has created a very nostalgic, highly snackable Melty Mozzarella Tomato Toast recipe that’s full of flavor and melty, to give your weekday dishes a Tillamook Taste-Over.

Ingredients

For the herb sauce

  • 1 tbsp minced fresh basil

  • 1 tbsp minced fresh parsley

  • 1 tbsp minced garlic

  • 1 ½ tbsp red wine vinegar

  • 3 tbsp olive oil

  • Salt to taste

  1. Heat oven or grill to 450 degrees.

  2. Make the herb sauce: In a small bowl, whisk basil, parsley, garlic, vinegar, and oil together until it is combined. Season with a pinch or two of salt, to taste. Set aside.

  3. Sprinkle salt over tomato slices to extract juices. Set aside.

  4. On a sheet pan, assemble the toast: Drizzle olive oil on both sides of sourdough. Lay 4 slices of Tillamook Whole Milk Mozzarella across each slice of bread, then rest 1 slice of tomato on top of the mozzarella.

  5. Place sheet pan into oven or grill and cook for 4-6 minutes (grill closed, if using) until mozzarella is very melty and bread is nicely toasted.

  6. Serve toasts immediately, drizzled with herb sauce. Enjoy!

    1. Tip 1: In peak tomato season, which is also peak summer, you can make this recipe on the grill to keep your kitchen cool during the hottest time of the year!

    2. Tip 2: To get the most out of your tomatoes, be sure to do these two things: 1. Cut them with a bread knife. The serrated edge will glide through the tomato with ease. 2. Immediately after slicing, sprinkle your tomato slices with salt to extract their juices and maximize their flavor.
